AN INTRODUCTION

Located in the beautiful Mission Beach area of Far North Queensland, Bingil Bay Distillery is a pioneer in distilling innovation. Our unique Sub-ATMOSPHERIC® vacuum distilling produces cleaner, crisper spirits.  We are dedicated to traditional retort style distillation with a modern, low-temperature gentle approach, to be kinder to our precious ingredients.

OUR SUB-ATMOSPHERIC® PROCESS

A combination of integrated innovations, made possible by the 40% lower temperature vacuum method. These include 80% heat recovery and re-cycle, Close Coupled distillation, and several other innovations, which together result in elimination of carbon emitting steam boilers, no chillers and no energy hungry heat dumping. The small amount of electricity needed is entirely from solar. The result is energy net zero, and a cheaper, better, cleaner, safer, environmentally sustainable distillery.

INNOVATIVE TECHNOLOGY

Our world-first Sub-ATMOSPHERIC® vacuum stills, affectionately named Fat Boy and Thumper, began making spirits in 2019. We are passionate about a more gentle approach to capture the delicate flavours of our locally grown sugar products and botanicals.  We use softer methods which were not available to the spirit founders, to nurture crisper tasting spirits for rum and gin. And at energy net zero, we are soft on the environment too. 
Not only that, we are refining our processes and developing intellectual property to share with the global distilling community. We are not disruptors; we are placing our stamp of innovation into the timeline of distilling.
