Where are we now?
Located in the Mission Beach area, Far North Queensland, at the Bingil Bay Distillery we have designed, developed and installed unique energy efficient distilling equipment. Spirits from Bingil Bay Distillery are created in the Williams close coupled still, which operates at lower temperatures under Sub-Atmospheric™ conditions. The low temperature distillation ensures fresher flavours without stewing the core ingredients. |
Where are we going?
The full scale plant has commenced production of rum which is quietly hibernating in cozy barrels for the next two years. Meanwhile, gin development is well underway and unlike the lazy rum will be out and about this year. The next phase of the Bingil Bay Distillery journey is the tourism and visitor centre fit out and completion. We look forward to welcoming you to Bingil Bay Distillery to sample our tropical spirits in the future. |
Our unique process
The World first high-tech Sub-Atmospheric™ stills (affectionately named Fat Boy and Thumper) began making spirit in 2019. Using locally grown sugar products, our stills produce new generation, crisper tasting spirits for rum and gin. And a range of mouth-watering liqueurs are under development. |
